Homemade & Healthy Avocado Fudgsicles
Ingredients:
- 1 large avocado (or 1.5 medium avocados)
- 1 13.5 oz can full-fat coconut milk (melted)*
- 3/4 cup raw cacao powder
- 20 drops liquid stevia extract** OR 3-4 tbs organic raw honey
*Since coconut oil has a melting point of around 75ºF, your coconut milk may be solid if you keep your house cool. To melt the coconut milk, simply place the unopened can outside in the sun or in a bowl of warm water for 10-15 minutes. Give the can a shake before opening it to make sure it’s melted!
**I use Whole Foods 365 brand
Instructions:
Add all ingredients to a blender and blend on medium speed for 30 seconds or until the texture is consistent.
Transfer the mixture to your popsicle molds (I have and recommend these stainless steel popsicle molds — no plastic and will last forever!).
Place the fudgsicle molds in the freezer to set for at least 3 hours.
After your fudgsicles have set, remove from the molds and enjoy!

I’m honestly not sure – I haven’t tried it with anything else. You could give it a go with any other non-dairy alternative of choice to experiment and see how it goes!
