But there’s one thing for certain: they know how to do diners and their diners know how to do pie.
One of my favorite things to do when I’m back in my home state visiting family is hit up the diner down the street from where I grew up and get a slice of Key Lime Pie. (No, no it’s not very healthy — balance.)
Of all of the pies to choose from, it’s my favorite. Something about that sweet and tart combo really tickles my taste buds. And since I’ve been a little homesick recently all the way across the country in CA, I thought I’d try to recreate my favorite pie in smoothie-form.
This Coconut Key Lime Pie Smoothie is certainly a break-away from my typical veggie-filled, low-carb smoothie that doubles as a meal, but it’s a great healthy dessert option — surely a heck of a lot healthier than my favorite pie that inspired it!
Coconut Key Lime Pie Smoothie
Ingredients:
- 1 cup So Delicious unsweetened coconut milk*
- 2 tbs So Delicious Coconut Culinary Milk*
- Juice of 2 limes
- 1/3 cup cashews
- 1/2 medium avocado
- 1/2 tsp vanilla bean powder
- 1 tsp honey
- Handful of ice
- Optional: 1 scoop collagen peptides (or other protein powder of choice)

Directions:
Add all ingredients to a high-speed blender and blend on high for 15-20 seconds.
Serve and enjoy!
