3 Superfood Popsicle Recipes to Keep Healthy & Cool This Summer

Not only are these popsicle recipes loaded with superfood goodness, they’re also incredibly delicious too. The perfect treat for a hot summer day!

There’s no doubt about it: popsicles are as much a summertime staple as sandals.

I fondly remember the after-dinner sprint down the road to catch the ice cream man before he left the neighborhood. My go to? The Strawberry Shortcake popsicle 🙂

And we ALWAYS had those thin, neon juice pops in the freezer. You know, the ones that stained your whole mouth some crazy color.

To this day, I can’t imagine spending the season without popsicles at the ready in the freezer!

But I’ve grown up, and so have my popsicles…

It’s incredibly easy to make insanely delicious and nutritious popsicles.

#adulting but NOT in a boring way!

All you need is a base — banana, avocado, and non-dairy milk make for really smooth, creamy popsicles — and the options are endless from there.

I always add fresh fruit, and have found that freeze-dried fruit really kicks up the flavor since it’s so concentrated.

You can get a bit bold and add herbs like basil and mint (both pair really well with berries).

And I even like to sneak in some superfoods like chia seeds, matcha, and… wheatgrass! (Yes!)

Why not do your body a bit of good while also treating your taste buds!?


Chia Chocolate-Covered Strawberry Superfood Popsicles

Chia seeds are an incredible source of cleansing fiber and healthy fats, making these popsicles a satisfying snack as well as sweet treat! Raw cacao provides a megadose of antioxidants while the freeze-dried strawberries add incredible flavor.

Ingredients

Makes: 2 cups

Directions

  1. Add all ingredients to a blender.
  2. Blend on high for 30-60 seconds.
  3. Pour the mixture into your popsicle molds (quickly, or else the ground chia seeds will start to thicken the mixture and it will be difficult to pour!).
  4. Insert the popsicle sticks.
  5. Allow to set in the freezer for at least 2 hours.
  6. Remove from the molds and enjoy!

Tropical Wheatgrass Superfood Popsicles

Wheatgrass is the star of this recipe. It’s especially high in the antioxidant vitamins A, C, and E. It’s also a rich source of chlorophyll — hence its vibrant green color! — which helps calm inflammation, aid the body’s natural detox processes, and boost the immune system.

Ingredients

Makes: 2 cups

Directions

  1. Add all ingredients to a blender.
  2. Blend on high for 30-60 seconds.
  3. Pour the mixture into your popsicle molds.
  4. Insert the popsicle sticks.
  5. Allow to set in the freezer for at least 2 hours.
  6. Remove from the molds and enjoy!

Blueberry Matcha Mint Superfood Popsicles

Matcha is an incredibly rich source of antioxidants — up to 10 times more than regular green tea per serving — plus contains l-theanine, an amino acid that promotes calmness and relaxation. Blueberries are also rich in antioxidants, and avocado provides healthy fats.

Ingredients

Makes: 2 cups

*I used 1 tbs per popsicle mold. You may need or wish to adjust depending on the size of your molds.

Directions

  1. Add the banana, avocado, non-dairy milk, matcha, and mint to a blender.
  2. Blend on high for 30-60 seconds.
  3. Add the dried blueberries to the popsicles molds. (I used 1 tbs of per popsicle mold. You may need or wish to adjust depending on the size of your molds.)
  4. Pour the mixture into your popsicle molds, over the blueberries.
  5. Give the pops a gentle bang on the counter to release any trapped air bubbles.
  6. Insert the popsicle sticks.
  7. Allow to set in the freezer for at least 2 hours.
  8. Remove from the molds and enjoy!
