Nothing says “It’s The Holiday Season!” quite like a hot pie, fresh from the oven.
(Except maybe Mariah. OK, definitely Mariah.)
But gluten-free baking sometimes doesn’t get the message across quite as clearly…
I’ve really struggled with gluten-free baking. Like pulled-my-hair-out, broken-dishes, been-pushed-to-the-point-of-considering-anger-management struggled. I’ve tried mixing SO MANY different types of gluten-free flours and with varied success — one batch of cookies would turn out great while another had to be eaten with a spoon because it was too crumbly. WHY!?
The problem is that gluten-free flours are each so different, and so finding the right amount of water, oil, and eggs to go with the flour you’ve used is very tricky.
Bob’s Red Mill 1-to-1 gluten-free flour has seriously saved me! It’s perfectly formulated for baked goods – no additional specialty ingredients or custom recipes required — and has terrific taste and texture. Plus the protein in the sorghum flour helps give baked goods an almost wheat-like texture and aids in browning, giving you a perfectly golden pie crust.
Most of all, I love that Bob’s Red Mill 1-to-1 gluten-free flour works extremely well with coconut oil, my favorite healthy oil for cooking and baking.
This homemade and healthy super simple gluten-free pie crust is my new holiday go-to!
Ingredients:
- 2 cups Bob’s Red Mill 1-to-1 baking flour (click here to get $1.00 off your next Bob’s Red Mill purchase!)
- 1¾ cup refined coconut oil, solidified (remember: refined coconut oil has no taste while unrefined coconut oil has a distinct coconuty flavor)
- 1-3 tbs ice water (if needed)
- 4 tbs raw organic honey
- ½ tsp salt
(I made a half-batch for these cute mini pies here, which were perfect for my fiancé and I!)
Directions:
Combine the flour, coconut oil, salt, and honey in a mixing bowl, and form a thick dough by mashing everything together with a fork. If necessary, add ice water to the mixture to help form the dough, starting with just one tablespoon and working up to 3.
Once the dough has formed, press it into a greased pie dish. Bake the crust for 10 minutes at 350ºF, then add your fillings and continue to bake for 15-20 minutes.
