OK scratch that… Quinoa for breakfast anyone!?

This delicious and nutritious quinoa breakfast porridge is the lovechild of my two most recent culinary efforts:

  1. To get more frozen wild blueberry goodness into my diet beyond smoothies
  2. To experiment with using quinoa in breakfast recipes

As it turns out, quinoa’s an amazing breakfast ingredient, and works just as well in sweeter recipes as in savory.

Who knew!?

OK probably a lot of people. But not me!

For the oh so many years that I’ve been eating this protein-packed seed — yep, quinoa’s actually a seed, not a grain! — I’ve NEVER had it for breakfast.


Why eat quinoa for breakfast rather than oats?

What exactly makes quinoa such a great breakfast option? And a better breakfast option than other grains?

Quinoa is rich in fiber and plant-based protein, which keep you full and your blood sugar levels balanced.

This yummy quinoa breakfast recipe combines the fiber and protein of quinoa with the healthy fats in coconut milk and antioxidant-packed wild blueberries.

Not only is it an incredibly healthy breakfast option, but it’s darn delicious too! And without needed any additional sugars — not even healthier sweeteners like honey or maple syrup.

And of course, it will keep you full and satiated all the way until lunchtime.

Ingredients

  • 1 cup white quinoa (preferably sprouted)
  • 2 cups coconut milk OR your non-dairy milk of choice
  • 3 tbs whole-fat canned coconut milk / coconut cream
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2.5 cups frozen organic wild blueberries*
  • A sprinkle of mineral-rich sea salt
  • Sliced almonds (for topping)

Instructions

  1. Add the quinoa, coconut milk, coconut cream, and salt to a medium saucepan (with a tight lid) over medium-high heat.
  2. Bring it to a boil, then turn the heat down to low and put the lid on.
  3. Cook until most of the liquid is absorbed, about 10-12 minutes.
  4. Add the wild blueberries, cinnamon, and vanilla extract, and cook for another 3-4 minutes.
  5. When ready to serve: top with 1 tbs of hemp seeds and 1 tbs of crushed almonds and/or walnuts per serving.
  6. Enjoy!
