Do you know the Truffle Shuffle?
If yes, we could totally be friends. We could watch The Goonies while we eat these delicious salted “caramel” pecan truffles in honor of our boy Lawrence Cohen (a.k.a. “Chunk”). A whole batch of them… for each of us.
OK OK so maybe a batch each is a little excessive. But hey, a girl does need a treat once in a while (read: everyday) and these 3-ingredient truffles are free of refined sugar, gluten, and anything artificial or processed (read: perfect).
Homemade & Healthy Salted “Caramel” Pecan Truffles
Ingredients
- 1 cup pecans
- 8 large medjool dates, pitted and soaked (in case you didn’t know, dates taste a lot like caramel!)
- ¼ teaspoon real salt (or more/less to taste)
Directions
Soak your medjool dates in water for at least 6 hours to soften them. After they have soaked drain the water and remove the pits (if they’re not already pitted).
In a food processor, grind the pecans until powdery. Separate about a quarter of the ground pecans into a bowl for later. Leave the remaining ground pecans in the processor, and add the soaked dates. Blend the two together until a smooth paste/dough forms. Roll the paste/dough into small balls.
Add the salt to the ground pecans that you previously separated into a bowl and mix to disperse evenly. Then roll the paste/dough balls into the ground pecans and salt.
